These mini cheese ball bites are creamy, crunchy, and endlessly customizable, perfect for parties or as a fun snack spread.

Ingredients

Base Ingredients

  • 8 oz cream cheese, softened full-fat for best texture; low-fat can be used but will be less rich
  • 1 cup shredded cheese cheddar or your favorite sharp cheese
  • 1/4 cup sour cream adds tang and softens the texture
  • Salt and pepper to taste

For Cranberry & Pecan

  • 1/2 cup dried cranberries, chopped
  • 1/2 cup pecans, chopped

For Bacon & Ranch

  • 1/2 cup cooked bacon, crumbled use thick-cut for extra texture
  • 2 tablespoons ranch seasoning or 2 tbsp ranch dressing mix

For Honey Sesame

  • 1/4 cup honey
  • 1/4 cup sesame seeds

Instructions

Preparation

  • In a mixing bowl, beat the softened cream cheese, shredded cheese, and sour cream together until smooth and well combined. Season with a pinch of salt and pepper.
  • Divide the cheese mixture into three equal portions using a spoon or an ice cream scoop so balls are uniform.

Flavoring and Shaping

  • For Cranberry & Pecan: fold the chopped cranberries and pecans into one portion. Scoop a small amount (about 1 tablespoon) and roll into tight balls between your palms. Place on a tray.
  • For Bacon & Ranch: stir the crumbled bacon and ranch seasoning into the second portion. Shape into balls the same size as the first batch.
  • For Honey Sesame: stir the honey into the remaining portion until evenly mixed. Form balls and then gently roll each ball in sesame seeds until coated.
  • Transfer all the balls to a tray, cover, and refrigerate for at least 30 minutes to firm up.

Serving

  • Serve chilled with crackers, sliced baguette, or vegetable sticks.

Notes

Best ways to enjoy: Arrange the three flavors on a large wooden board and label each section so guests know what they’re tasting. For a festive twist, skewer a ball with a pretzel stick or rosemary sprig for easy pick-up.
