How to Make Mini Cherry Almond Cake
Preheat the oven to 350 degrees F. Prepare a baking tray with parchment paper.
In a small bowl, whisk together flour, baking powder, and salt. Set aside.
In a large bowl, cream butter and sugar until light and fluffy. Add oil, eggs, almond and vanilla extracts, mixing well.
Alternate adding the flour mixture and milk to the batter, starting and ending with flour. Pour batter into the baking tray and bake for 25-27 minutes.
After cooling, cut out cake circles. Make frosting by beating butter and adding powdered sugar, extracts, and cherry juice. Spread cherries on one layer, stack, frost, and garnish with cherries.
