Ingredients

Cupcake Batter:

  • 1 cup all-purpose flour 125 grams
  • 1 cup granulated sugar 200 grams
  • 1/2 cup cocoa powder 45 grams
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup vegetable oil 60 ml
  • 1 large egg room temperature
  • 1 teaspoon vanilla
  • 1/2 cup milk 120 ml
  • 1/3 cup freshly brewed coffee or boiling water 80 ml

Mint Frosting:

  • 1 cup unsalted butter 226 grams
  • 3-4 cups powdered sugar 330-400 grams
  • 1/4 teaspoon salt
  • 2-3 tablespoons whipping cream 30-45 ml
  • 1/2 - 2 teaspoons mint extract
  • Green food coloring

Instructions

Mint Frosting:

  • 1. Beat the butter until lightened in color and softened.
  • 2. Gradually add sifted powdered sugar, salt, and mint extract.
  • 3. Alternate adding powdered sugar and whipping cream, adjusting mint extract for desired flavor.
  • 4. Optionally add green food coloring.
