Mojito Fruit Salad

A refreshing salad that combines the sweetness of watermelon, strawberries, and blueberries with mint and lime for a light and vibrant dish.

Ingredients

Fruits

  • 3 cups watermelon, cubed Use ripe watermelon for sweetness.
  • 2 cups strawberries, hulled and sliced Fresh strawberries are best.
  • 1 cup blueberries Rinse before use.
  • 1/4 cup fresh mint leaves, chopped Adds a refreshing flavor.

Dressing

  • 2 tablespoons honey or agave syrup (optional) Adjust sweetness to taste.
  • 2 large juices of limes Freshly squeezed is recommended.
  • 1 pinch salt Enhances flavors.

Instructions

Preparation

  • Cut the watermelon into cubes, hull and slice the strawberries, and rinse the blueberries.
  • In a large mixing bowl, combine the watermelon, strawberries, and blueberries.

Dressing

  • In a small bowl, whisk together the lime juice, honey (if using), and a pinch of salt until well blended.
  • Pour the lime mixture over the fruit and gently toss to ensure the fruit is evenly coated.

Assembly

  • Add the freshly chopped mint leaves to the bowl, gently folding them into the fruit salad.
  • Let the salad sit in the refrigerator for about 15-20 minutes before serving to allow the flavors to meld.

Notes

Store in an airtight container in the refrigerator and consume within 2-3 days. It’s best to add the dressing just before serving to keep the fruits fresh.
