  • 2 cups pecans Chop before adding to the mixture.
  • 2 cups sweetened shredded coconut Can use unsweetened, but may reduce sweetness.
  • 1.5 cups granulated sugar
  • 1 cup brown sugar Packed tightly.
  • 0.5 cups evaporated milk For the caramel coating.

Preparation

  • In a large saucepan, combine the granulated sugar, brown sugar, and evaporated milk. Cook over medium heat until the mixture reaches a soft boil.
  • Allow it to boil for 5 minutes, stirring continuously to prevent burning.
  • Remove the saucepan from heat and stir in the shredded coconut and chopped pecans until everything is well combined.
  • Using a spoon, drop generous spoonfuls of the mixture onto a parchment-lined baking sheet.
  • Let the cookies cool at room temperature until they are set, which should take about 2 hours.

Notes

Store in an airtight container at room temperature for up to a week. Can be refrigerated to extend shelf life. For added flavor, toast the pecans before mixing.
