Preparation
Preheat your oven to 350°F and lightly grease a pie dish.
Wash and grate 2 medium apples (no need to peel!).
Peel and grate 2 medium carrots.
Measure out 2 cups of oats and your other ingredients.
Cooking
Mix your grated apples and carrots in a large bowl.
Add oats, cinnamon, and a pinch of salt.
Stir in honey (or maple syrup), melted butter, and vanilla.
Pour mixture into your prepared pie dish and press down lightly.
Bake for about 35 minutes until the top is golden and the house smells amazing.

Notes
