Main Ingredients

  • 2 medium apples, grated Granny Smith or Honeycrisp recommended.
  • 2 medium carrots, grated Use freshly grated carrots.
  • 2 cups old-fashioned oats Do not use quick oats.
  • 1 tsp cinnamon
  • 1 pinch salt
  • 1/4 cup honey or maple syrup Use honey for non-vegan option.
  • 1/4 cup butter, melted Replace with coconut oil for a dairy-free option.
  • 1 tsp vanilla extract

Instructions

Preparation

  • Preheat your oven to 350°F and lightly grease a pie dish.
  • Wash and grate 2 medium apples (no need to peel!).
  • Peel and grate 2 medium carrots.
  • Measure out 2 cups of oats and your other ingredients.

Cooking

  • Mix your grated apples and carrots in a large bowl.
  • Add oats, cinnamon, and a pinch of salt.
  • Stir in honey (or maple syrup), melted butter, and vanilla.
  • Pour mixture into your prepared pie dish and press down lightly.
  • Bake for about 35 minutes until the top is golden and the house smells amazing.
  • Let it cool for 15 minutes before slicing and serve warm or cold.

Notes

This pie tastes even better the next day! It can be served with Greek yogurt, honey, or ice cream. It also freezes well – wrap in plastic and freeze for up to 3 months.
