Ingredients

Dry Ingredients

  • 1 cup rolled oats Can substitute old-fashioned oats
  • 1 cup all-purpose flour For a gluten-free option, use a 1:1 gluten-free baking blend
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon Can add a pinch of nutmeg for enhanced flavor
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, melted Can substitute with coconut oil or vegan butter
  • 1 large egg Can substitute with a flax egg for a vegan option
  • 1 teaspoon vanilla extract

Mix-in

  • 1 cup raisins Can replace with chopped dates or cranberries for variety

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan.
  • In a bowl, mix together the oats, flour, brown sugar, granulated sugar, baking soda, cinnamon, and salt.
  • In another bowl, whisk together the melted butter, egg, and vanilla extract.
  • Combine the wet ingredients with the dry ingredients and mix until fully combined. Fold in the raisins.
  • Spread the mixture evenly into the prepared baking pan.

Baking

  • Bake for 20-25 minutes, or until the edges are golden and a toothpick comes out clean.
  • Allow to cool before cutting into bars and serving.

Notes

Store in an airtight container at room temperature for up to a week, or refrigerate for longer freshness. Can be frozen for up to three months. Let bars cool completely in the pan before cutting to avoid crumbling.
