  • 1/2 cup unsalted butter, softened Use a vegan butter replacement for a vegan option.
  • 1/2 cup raisins Can substitute with chocolate chips or other dried fruits.
  • 1 teaspoon cinnamon Add a pinch of nutmeg or ginger for extra spice.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg Substitute with a flax egg for a vegan version.
  • 1 teaspoon vanilla extract

Instructions

Preparation

  • Preheat the oven to 350°F (175°C) and grease a baking dish.
  • In a large bowl, cream together the butter and sugars until smooth.
  • Beat in the egg and vanilla extract until well combined.
  • In another bowl, mix together the rolled oats, flour, baking soda, cinnamon, and salt.
  • Gradually combine the dry ingredients with the wet ingredients, then fold in the raisins.
  • Spread the mixture evenly in the prepared baking dish.

Baking

  • Bake for 25-30 minutes or until golden brown and set.
  • Allow to cool before cutting into bars and serving.

Notes
