Ingredients

Cookie Batter

  • 3/4 cup shortening
  • 3/4 cup packed light brown sugar
  • 1 large egg
  • 1/2 cup molasses dark molasses can be used for richer flavor
  • 2 1/2 cups all-purpose flour
  • 1/4 tsp salt
  • 2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • Granulated sugar for rolling cookies

Instructions

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a mixing bowl, cream together the shortening and brown sugar until fluffy.
  • Beat in the egg and molasses until well combined.
  • In another bowl, whisk together the flour, salt, baking soda, cinnamon, ginger, and nutmeg.
  • Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  • Roll the dough into small balls and roll each ball in granulated sugar.
  • Place the cookies on a baking sheet lined with parchment paper.
  • Bake for 8-10 minutes or until the edges are set.
  • Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies can be served with tea or coffee. Store in an airtight container for up to one week, or freeze for longer storage. Chill the dough for 30 minutes if it's too sticky to handle.
