Instructions
Preparation
In a large bowl, mix the sourdough starter and warm water until combined.
Gradually add in the flour and salt, mixing until a dough forms.
Fold in the chopped olives and grated Parmesan cheese.
Knead the dough on a floured surface for about 10 minutes until smooth.
Place the dough in a greased bowl, cover with a damp cloth, and let it rise for about 4-6 hours or until doubled in size.
Baking
Preheat your oven to 450°F (230°C).
Shape the dough into a round loaf and place it on a baking sheet.
Let it rest for another 30 minutes before scoring the top.
Bake for 30-35 minutes, or until golden brown.
Allow to cool before slicing.
Notes
Store at room temperature in a paper bag for up to three days, or wrap tightly and freeze for up to three months. Thaw and reheat for freshness.
