  • 4 cups all-purpose flour

  • 1.5 teaspoons salt
  • 1 cup warm water

Instructions

Preparation

  • In a large bowl, mix the sourdough starter and warm water until combined.
  • Gradually add in the flour and salt, mixing until a dough forms.
  • Fold in the chopped olives and grated Parmesan cheese.
  • Knead the dough on a floured surface for about 10 minutes until smooth.
  • Place the dough in a greased bowl, cover with a damp cloth, and let it rise for about 4-6 hours or until doubled in size.

Baking

  • Preheat your oven to 450°F (230°C).
  • Shape the dough into a round loaf and place it on a baking sheet.
  • Let it rest for another 30 minutes before scoring the top.
  • Bake for 30-35 minutes, or until golden brown.
  • Allow to cool before slicing.

Notes

Store at room temperature in a paper bag for up to three days, or wrap tightly and freeze for up to three months. Thaw and reheat for freshness.
