Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine pancake mix, milk, egg, and vanilla extract until well mixed.
  • In a greased baking dish, layer the cooked sausage evenly across the bottom.
  • Pour the pancake batter over the sausage.

Baking

  • Bake for 25-30 minutes or until the top is golden brown and a toothpick comes out clean.
  • Let cool for a few minutes before slicing and serving.

Notes

Serve warm, drizzled with maple syrup or dusted with powdered sugar. Store leftovers in the refrigerator for up to 4 days. To freeze, wrap tightly and store for up to 2-3 months.
