- 1 pound penne pasta
- 1 Tablespoon olive oil
- 1 clove garlic, minced
- 3 to 4 cups chopped veggies of choice
- 1 Tablespoon butter
- 2/3 cup low-sodium chicken broth
- 1/2 cup heavy whipping cream (or half and half)
- 1/2 cup freshly grated Parmesan cheese, or more, to taste
- Salt and freshly ground black pepper, to taste
- 1/2 cup fresh basil leaves, chopped, for garnish
How to Make Pasta Primavera
Cook pasta according to package instructions. Set aside.
Add olive oil to a large skillet over medium-high heat. Add garlic, stir, add veggies, season, sauté until tender.
Add butter, pour in chicken broth and cream, simmer, stir in cheese, season with salt and pepper.
Add pasta and veggies to the pan, toss, top with fresh basil.
