Ingredients

Pasta and Vegetables

  • 8 oz rotini pasta Cook until al dente
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumber
  • 1/2 cup black olives Sliced or whole
  • 1/4 cup chopped fresh parsley

Dressing and Seasoning

  • 1/2 cup Italian dressing Adjust to taste
  • to taste Salt and pepper Enhance flavor

Instructions

Preparation

  • Boil the rotini pasta in salted water until al dente, then drain and rinse with cold water.
  • While the pasta is cooking, chop the cherry tomatoes, cucumber, olives, and parsley.
  • In a large bowl, combine the cooled pasta with the chopped vegetables and parsley.
  • Pour in the Italian dressing and toss until evenly coated.
  • Season the salad with salt and pepper to taste and add more dressing if desired.
  • Portion the pasta salad into small clear plastic cups.
  • Refrigerate until ready to serve.

Notes

For best taste, store in the refrigerator and consume within 3-4 days. Keep dressing separate if stored for longer than a day.
