Pasta and Vegetables

rotini pasta
Cook until al dente

cherry tomatoes, halved

diced cucumber

black olives
Sliced or whole

Dressing and Seasoning

Preparation
Boil the rotini pasta in salted water until al dente, then drain and rinse with cold water.
While the pasta is cooking, chop the cherry tomatoes, cucumber, olives, and parsley.
In a large bowl, combine the cooled pasta with the chopped vegetables and parsley.
Pour in the Italian dressing and toss until evenly coated.
Season the salad with salt and pepper to taste and add more dressing if desired.
Portion the pasta salad into small clear plastic cups.
Refrigerate until ready to serve.
Notes
For best taste, store in the refrigerator and consume within 3-4 days. Keep dressing separate if stored for longer than a day.
