Ingredients
Pie Crusts:
29-inchpie crusts (1 box)
Peach Filling:
5-6largepeaches (about 4 cups)
1/2cuppacked brown sugar
1/4cupsugar
1/4cupflour
1/8tspsalt (optional)
2tspcinnamon
1tbspbutter
Additional Ingredients:
1egg, beaten
1tbspsugar (for top)
Instructions
Preheat oven to 425 degrees. Place first pie crust over prepared 9-inch pie plate and press dough into pie plate.
Peel peaches, then cut into about 1/2-inch thick slices. Whisk together brown sugar, sugar, flour, salt, and cinnamon in another bowl.
Add sugar and flour mixture to peaches and stir to coat. Immediately pour peach mixture into pie crust and dot with butter.
Place remaining pie crust over the filling, press the edges together to seal, and cut slits in the top crust. Brush the top of the pie with beaten egg and sprinkle with sugar.
Freeze the pie for 15 minutes, then place it on a preheated cookie sheet in the oven. Bake at 425 degrees for 15 minutes, then reduce the temperature to 375 degrees and bake for an additional 40-45 minutes. Cool before serving.
Notes
For a more decorative top crust, try creating a lattice pattern with the second pie crust.
