  • ½ cup brown sugar
  • ¼ cup whole milk Can use dairy-free milk for vegan option
  • 1 teaspoon vanilla extract

Toppings

  • 1 cup caramel sauce Store-bought or homemade
  • 1 cup melted chocolate chips Melt in microwave in brief intervals

Instructions

Preparation

  • In a medium saucepan over medium heat, combine butter, brown sugar, and milk. Stir gently until the butter melts and the mixture starts to bubble.
  • Remove from heat and mix in peanut butter and vanilla extract until smooth.
  • Gradually add oats, stirring until they are evenly coated and the mixture is sticky.

Shaping Cookies

  • Portion the oat mixture onto a parchment-lined tray using a tablespoon or small cookie scoop.
  • Flatten each portion slightly and create a small indentation in the center.

Assembling

  • Spoon caramel sauce into the indentation of each cookie.
  • Melt chocolate chips and drizzle over the cookies.

Setting

  • Refrigerate the cookies for at least 30 minutes to firm up.
