  • 1 cup peanut butter (smooth or crunchy) Use natural-style for more nutty flavor.
  • 1 cup sugar For a chewier texture, swap half for brown sugar.
  • 1 large egg Use room temperature for even mixing.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda Helps cookies spread and brown.
  • 1/4 teaspoon salt Enhances flavor.

Instructions

Preparation

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a mixing bowl, add peanut butter and sugar. Stir to combine.
  • Add the egg and vanilla extract. Mix until smooth.
  • Sprinkle in baking soda and salt. Mix until evenly distributed.
  • Scoop tablespoon-sized portions of dough and place them 2 inches apart on the baking sheet.
  • Press each ball gently with a fork to create a crisscross pattern.

Baking

  • Bake for 10–12 minutes, until the edges are just turning golden.
  • Let the cookies cool on the baking sheet for 3–5 minutes, then transfer to a wire rack to cool completely.

Notes

Store baked cookies in an airtight container at room temperature for up to 5 days. For longer storage, freeze in a freezer-safe container for up to 3 months. To freeze dough, scoop balls onto a tray and flash-freeze for 1 hour before transferring to a zip-top bag.
