  • 4 medium flour tortillas
  • 1.5 cups shredded mozzarella cheese Opt for freshly shredded for better melting properties.
  • 0.5 cup shredded cheddar cheese Optional for extra flavor.
  • 0.5 cup sliced pepperoni
  • 0.25 teaspoon dried oregano Feel free to experiment with your favorite spices.
  • 0.25 teaspoon garlic powder
  • 1 tablespoon olive oil or butter For grilling.
  • 0.5 cup pizza or marinara sauce For dipping.

Instructions

Preparation

  • Place a large skillet over medium heat and add a little olive oil or butter.
  • Lay a tortilla flat and sprinkle half of it with mozzarella and cheddar cheeses.
  • Add a layer of pepperoni slices, then sprinkle on oregano and garlic powder.
  • Fold the tortilla in half.

Cooking

  • Place the folded tortilla in the skillet and cook for about 2–3 minutes per side, or until golden and crispy with fully melted cheese.
  • Press gently with a spatula for even browning.
  • Repeat with remaining tortillas and ingredients.
  • Let cool slightly, then slice each quesadilla into wedges.

Serving

  • Serve warm with a side of marinara or pizza sauce for dipping.

Notes

These quesadillas are best served immediately while hot and crispy. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet to retain crispiness.
