Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Add the onion, bell pepper, and garlic, and sauté until soft.
  • Add the diced chicken and cook until browned and cooked through.
  • Stir in the pineapple chunks and their juice, as well as the soy sauce.
  • Add the cooked rice and stir to combine, cooking until heated through.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with chopped green onions.

Notes

For added flavor, marinate the chicken in soy sauce and garlic for 30 minutes before cooking. Consider adding more vegetables for a nutritious boost.
