Instructions

Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Add diced chicken and cook until browned.
  • Stir in onion and bell pepper, cooking until softened.
  • Add pineapple chunks and soy sauce, mixing well.
  • Fold in cooked rice, combining all ingredients thoroughly.
  • Season with salt and pepper. Cook for an additional 2-3 minutes until heated through.
  • Serve hot, garnished with green onions if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. To reheat, warm it in the microwave or in a skillet over low heat. Frozen rice and chicken mixture can last up to three months. For a vegetarian option, substitute chicken with tofu or chickpeas.
