Pineapple Chicken Stir-Fry

Ingredients

For the Chicken Marinade

  • 1.5 lbs chicken breasts or thighs, cut into bite-sized pieces Use boneless and skinless for best results.
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp cornstarch
  • 1/2 tsp black pepper

For the Garlic Sauce

  • 3 tbsp soy sauce
  • 1 tbsp honey or brown sugar
  • 1 tbsp rice vinegar
  • 1 tbsp water
  • 1 tsp cornstarch
  • 1 tsp sesame oil
  • 1/4 tsp crushed red pepper flakes (optional) Add for extra heat.

For Stir-Frying

  • 1 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 inch piece of fresh ginger, grated
  • 1 cup pineapple chunks (fresh or canned)
  • 1 medium red bell pepper, sliced
  • 1/2 cup snow peas
  • 1/2 cup sliced carrots
  • 1 1 green onion, sliced
  • 2 cups cooked rice

Instructions

Marinate the Chicken

  • In a bowl, combine the chicken, soy sauce, rice vinegar, sesame oil, cornstarch, and black pepper. Let it marinate for 10-15 minutes.

Prepare the Garlic Sauce

  • In a small bowl, whisk together 3 tablespoons of soy sauce, 1 tablespoon of honey, 1 tablespoon of rice vinegar, 1 tablespoon of water, 1 teaspoon of cornstarch, and 1 teaspoon of sesame oil until the cornstarch is dissolved. Add crushed red pepper flakes if desired. Set the sauce aside.

Cook the Chicken

  • Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken, cooking for 5-7 minutes, stirring occasionally until it’s golden brown and cooked through. Remove the chicken from the pan and set aside.

Stir-Fry the Vegetables

  • In the same skillet, add a little more oil if necessary. Add garlic and ginger, sautéing for 1-2 minutes until fragrant. Then, add the pineapple chunks, bell pepper, snow peas, and carrots, stir-frying for 3-4 minutes until the vegetables are just tender.

Combine the Chicken and Sauce

  • Return the cooked chicken to the skillet. Pour the garlic sauce over everything, stirring to coat well. Cook for another 2-3 minutes until the sauce thickens and everything is nicely combined.

Serve

  • Serve the pineapple chicken stir-fry over a bed of cooked rice and garnish with sliced green onions for that extra freshness!

Notes

For the best flavor, allow the chicken to marinate and use fresh ingredients. Adjust heat levels according to taste and feel free to customize with your favorite vegetables or proteins.
