Pineapple-Cowboy Candy Pepper Jelly. It’s a vibrant jelly that combines the tropical zest of pineapple with the fiery kick of Cowboy Candy.

Ingredients

  • 1 fresh pineapple, trimmed and cut into cubes
  • 1 small 1 4-oz jar Cowboy Candy
  • 2 tablespoons lemon juice
  • 2 teaspoons butter to reduce foaming
  • 1 teaspoon crushed red pepper flakes
  • 1 package Sure-Jel fruit pectin
  • 6 cups sugar

Instructions

  • First, start by chopping your pineapple into cubes and then pulse in a food processor until finely chopped, but not pureed.
  • Next, transfer the pineapple to a large pot, aiming for about 4 cups.
  • Then, add Cowboy Candy, lemon juice, butter, red pepper flakes, and fruit pectin to the pot.
  • Afterwards, heat the mixture over high heat until it starts to boil, stirring frequently.
  • Once boiling, pour in all the sugar, stir well, and return to a rolling boil.
  • Subsequently, let it boil hard for 1 minute, then remove from heat.
  • Finally, ladle the jelly into prepared mason jars, seal, and process in a boiling water bath for 10 minutes.
  • Lastly, let the jars cool for 24 hours on the counter, occasionally shaking them to distribute the ingredients.

Notes

This jelly is fantastic on cream cheese and crackers, as a glaze for meats, or added to sandwiches for a spicy-sweet kick. Use gloves when handling Cowboy Candy to avoid chili oil on skin. Recipe yields 6–8 half-pint jars depending on pineapple size.
