Ingredients

  • 1/4 cup brown sugar, packed
  • 1 box (3.4 oz) instant pistachio pudding mix Using instant pudding helps maintain the creamy consistency.
  • 1 large egg
  • 1 teaspoon vanilla extract Optional: Add 1-2 teaspoons of pistachio extract for enhanced flavor.
  • 2 cups all-purpose flour Can be substituted with gluten-free flour blend.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease a baking pan.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  • Beat in the pistachio pudding mix until well combined.
  • Add the egg and vanilla extract, mixing until incorporated.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until fully combined.
  • Spread the dough evenly into the prepared baking pan.

Baking

  • Bake for 20-25 minutes or until the edges are lightly golden and a toothpick inserted in the center comes out clean.
  • Allow to cool before cutting into bars and serving.

Notes
