Preparation

  • Preheat the oven to 375°F (190°C) and lightly grease a muffin tin with cooking spray or oil.
  • In a mixing bowl, whisk the eggs and cottage cheese together until thoroughly blended and smooth.
  • Stir in the shredded cheddar cheese, diced potatoes, chopped chives, salt, and pepper to your taste.
  • Pour the mixture evenly into the muffin tin cups.
  • Bake for 20-25 minutes, or until the egg bites are set and golden on top.
  • Once baked, let them cool slightly before removing from the tin.

Notes

Store leftovers in an airtight container in the refrigerator for up to five days or freeze in a freezer-safe container for up to two months. Reheat in the microwave for about 30 seconds.
