Ingredients

For the Pretzel Crust

  • 1.5 cups crushed pretzels
  • 0.5 cups unsalted butter, melted
  • 2 tbsp light brown sugar

For the Brownie Batter

  • 0.5 cups all-purpose flour
  • 0.5 cups cocoa powder
  • 0.5 cups unsalted butter
  • 2 large eggs (60g each)
  • 0.5 cups granulated sugar
  • 0.5 cups light brown sugar
  • 4 oz quality dark chocolate (60–75% cocoa), melted
  • 1 tsp vanilla extract
  • 0.25 tsp salt
  • 0.5 cups dark or milk chocolate chunks (optional) For extra chocolate flavor

For the Caramel

  • 0.5 cups granulated sugar
  • 2 tbsp unsalted butter
  • 0.25 cups heavy cream
  • 1 pinch salt To enhance flavor

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
  • In a mixing bowl, combine the crushed pretzels, melted butter, and brown sugar. Press this mixture firmly into the bottom of the prepared pan. Bake in the oven for about 8 minutes until lightly golden.

Make the Brownie Batter

  • In another bowl, whisk together the unsalted butter and sugars until well combined.
  • Add in the eggs, vanilla extract, and the melted dark chocolate. Stir in the flour, cocoa powder, and salt until everything is mixed well.
  • If you like, fold in the chocolate chunks for extra chocolatey goodness.

Combine and Bake

  • Once the crust is baked, spread the brownie mix evenly over the pretzel base.
  • Return to the oven and bake for 25–30 minutes, or until the center is just set.

Prepare the Caramel

  • While the brownies are baking, heat the granulated sugar over medium heat in a saucepan, stirring gently until it melts and turns a golden color.
  • Carefully add in the butter and slowly pour in the heavy cream, stirring until smooth.
  • Add a pinch of salt to enhance the flavor.

Finish

  • Once the brownies are out of the oven, drizzle the warm caramel over the top.
  • Allow them to cool completely before slicing into squares.

Notes

For an elegant touch, serve your brownies warm, topped with a scoop of vanilla ice cream and a drizzle of extra caramel. Adding a sprinkling of sea salt on top just before serving can enhance the sweet and salty contrast.
