  • 3 pieces ripe bananas The riper, the better for sweetness.
  • 1/2 cup Greek yogurt Can be substituted with applesauce or dairy-free yogurt.
  • 1/3 cup honey or maple syrup For sweetening.
  • 2 large eggs
  • 1 cup protein powder Add more for higher protein content.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour or almond flour Almond flour for gluten-free option.

Instructions

Preparation

  • Preheat the oven to 350°F (175°C) and lightly grease a loaf pan.
  • In a large bowl, mash the ripe bananas until smooth.
  • Stir in the Greek yogurt, honey (or maple syrup), and eggs until well combined.
  • Add the protein powder, baking soda, salt, and vanilla extract, mixing until just combined.
  • Gradually fold in the flour until fully incorporated.
  • Pour the batter into the prepared loaf pan and smooth the top.

Baking

  • Bake for 45-55 minutes or until a toothpick inserted in the center comes out clean.
  • Allow to cool in the pan for a few minutes before transferring it to a wire rack to cool completely before slicing.

Notes

Store in an airtight container at room temperature for up to three days, or refrigerate for up to a week. Freeze individual slices for longer storage.
