Preheat your oven to 400°F (200°C).
Wash the sweet potatoes thoroughly and prick them with a fork. Place them on a baking sheet and bake for about 45 to 60 minutes, or until they are tender.
While baking, heat olive oil in a skillet over medium heat. Add the diced onion and minced garlic, sautéing until they become soft and fragrant.
Cooking
Add the ground turkey to the skillet and cook until it is browned, breaking it apart with a spoon.
Stir in the black beans, cumin, salt, and pepper, cooking until everything is heated through.
Once the sweet potatoes are baked, remove them from the oven and allow them to cool slightly.
Cut each sweet potato open lengthwise and fluff the insides with a fork.
Spoon the turkey and bean mixture generously into each sweet potato and top with shredded cheese.
Return the stuffed sweet potatoes to the oven for an additional 10 minutes, or until the cheese is melted.
