Ingredients

For the Pumpkin Bread

  • 1/4 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/2 tsp vanilla extract
  • 1/2 cup milk
  • 1 can pure pumpkin puree (15 oz) See notes
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 3/4 tsp pumpkin pie spice
  • 1/2 tsp kosher salt

For the Pumpkin Spice Streusel

  • 1/2 cup all-purpose flour
  • 1/4 cup light brown sugar, packed
  • 2 tbsp granulated sugar
  • 1/2 tsp pumpkin pie spice
  • 1/4 cup unsalted butter, melted

For the Maple Glaze

  • 1/2 cup powdered sugar
  • 1/4 cup pure maple syrup

Instructions

Preparation for Streusel

  • In a small bowl, mix together 1/2 cup all-purpose flour, 1/4 cup light brown sugar, 2 tbsp of granulated sugar, and 1/2 tsp pumpkin pie spice. Drizzle with melted butter and mix until crumbly. Set aside.

Make the Pumpkin Bread

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, whisk together 1 cup granulated sugar, 1/2 cup light brown sugar, vegetable oil, eggs, vanilla extract, milk, and pumpkin puree until well blended.
  • In a separate bowl, stir together 1 3/4 cups all-purpose flour, baking soda, 1 tsp cinnamon, 3/4 tsp pumpkin pie spice, and 1/2 tsp kosher salt.
  • Gradually add the dry ingredients to the wet mix until just combined.

Prepare for Baking

  • Pour the batter into a greased 9x5-inch loaf pan. Sprinkle the prepared pumpkin spice streusel on top of the batter.

Baking

  • Place the loaf pan in the preheated oven and bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.

Make the Maple Glaze

  • While the bread cools, whisk together 1/2 cup powdered sugar and 1/4 cup pure maple syrup until smooth. Drizzle over the cooled pumpkin bread.

Notes

Ensure that your pumpkin puree is well-drained to maintain the right consistency in the batter. Don’t overmix the batter; this will help keep your pumpkin bread light and fluffy. If you prefer a less sweet glaze, adjust the amount of powdered sugar to your liking. Feel free to customize this recipe with your favorite add-ins like chocolate chips, nuts, or raisins.
