Ingredients
  

Fritters

  • 2 large eggplants
  • 5 cloves garlic, chopped
  • 2 tablespoons fresh thyme
  • 2 tablespoons fresh parsley
  • 1 small shallot, chopped
  • 2 teaspoons lemon pepper
  • 2 teaspoons cumin
  • 1 teaspoon Kosher salt
  • 6 ounces feta cheese, crumbled
  • 2 cups breadcrumbs
  • 1/2 cup toasted sesame seeds

Tahini Sauce

  • 1/2 cup tahini sesame seed paste
  • 1/4 cup lukewarm water, plus more as needed
  • 2 cloves garlic
  • 2 tablespoons lemon juice
  • Kosher salt, to taste

Instructions
 

  • Preheat the oven to 400°F and roast the eggplants until soft.
  • Blend tahini paste, water, garlic, lemon juice, and salt until smooth.
  • Combine eggplant flesh, garlic, herbs, shallot, spices, and feta cheese in a food processor. Add breadcrumbs and sesame seeds.
  • Form mixture into fritters and fry in oil until crispy on both sides.
  • Serve hot with tahini sauce and optional toppings like fresh herbs, pomegranate seeds, or chopped pistachios.

Notes

Ensure the fritters are well-drained on paper towels after frying to remove excess oil.
