Instructions
Preparation
Soften the cream cheese at room temperature for 30–60 minutes for easiest mixing.
Roast garlic ahead of time: toss a head of garlic with olive oil, wrap in foil, and roast at 400°F (205°C) for 30–40 minutes until very soft; mash into a paste.
Mixing
In a mixing bowl, combine the softened cream cheese, shredded cheddar, mashed roasted garlic, and chopped herbs.
Season with black pepper and salt, then mix until smooth and evenly combined.
Forming and Chilling
Shape the mixture into a ball, wrap tightly with plastic wrap, and chill for at least 2 hours to firm up.
Before serving, roll the outside in chopped nuts if using.

Serve with crackers, sliced baguette, or crisp vegetables.
Notes
This cheese ball can be made 24 hours ahead. Roll in nuts right before serving to keep them crunchy.
