Ingredients
  

Crust

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup butter melted

Cheesecake Filling

  • 1 8 oz cream cheese softened
  • 1/3 cup sugar
  • 2 tablespoons all-purpose flour
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups mini Rolos

Instructions
 

Preparation

  • Preheat the oven to 350 degrees F. Line a 9 x 9-inch baking pan with parchment paper and spray lightly with nonstick cooking spray.
  • Mix graham cracker crumbs, melted butter, and sugar in a bowl. Press the mixture into the bottom of the pan and bake for 10 minutes.
  • Beat cream cheese until fluffy, then add sugar, egg, vanilla, and flour. Stir in mini Rolos and pour the mixture over the crust. Bake for 30-35 minutes.
  • Melt chocolate, butter, and corn syrup in a double boiler, then pour over the cheesecake. Chill overnight before serving.

Notes

For a richer flavor, use dark chocolate for the topping. Customize with nuts or sea salt for added flavor.
