Rustic Golden Potato Bake

Ingredients

Main Ingredients

  • 3 large potatoes, grated
  • 1 medium onion, finely chopped
  • 1 medium carrot, grated
  • 1 medium bell pepper, finely chopped
  • 3 large eggs, beaten
  • 300 ml milk
  • 200 g wholemeal flour
  • 2 tsp baking powder
  • Olive oil for frying Use as needed
  • Salt to taste
  • 150 g cheese, grated Any cheese variety can be used
  • Fresh chives, chopped For garnish

Instructions

Preparation

  • Preheat the oven to 180°C (350°F).
  • In a bowl, combine grated potatoes, onion, carrot, and bell pepper, mixing until the vegetables are evenly distributed.
  • In another bowl, whisk together the eggs, milk, wholemeal flour, baking powder, and a touch of salt until smooth.
  • Pour the egg mixture into the vegetable bowl and stir to combine everything well.

Cooking

  • Heat a splash of olive oil in a frying pan over medium heat.
  • Pour in the potato mixture and cook for about 5-7 minutes, or until it turns golden brown.
  • Transfer the mixture to a greased baking dish and sprinkle the grated cheese on top.
  • Bake in the preheated oven for 30-40 minutes, or until it’s golden and cooked through.

Serving

  • Garnish with chopped chives before serving for an extra burst of flavor.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. You can also freeze it for up to a month. For an extra crispy top, broil for a couple of minutes at the end of cooking. Customize the dish with your favorite vegetables or herbs.
