  • 1 medium Lemon Juiced for serving

Preparation

  • Preheat the grill or oven to the appropriate temperature.
  • Season the salmon fillets with your choice of herbs, salt, and pepper.

Cooking

  • Bake or grill the salmon until it’s tender and flakes easily with a fork.
  • Prepare the sweet potatoes by boiling, mashing, or roasting them based on your preference.
  • In a pan, sauté asparagus and mushrooms until they are tender and flavorful.
  • Serve the salmon alongside the sweet potatoes and sautéed vegetables for a colorful plate.
  • Drizzle fresh lemon juice on top to brighten the flavors.

Notes

For added flavor, marinate the salmon for at least 30 minutes before cooking. Try using different herbs or spices for a unique twist; dill, garlic powder, and paprika work especially well. Ensure that the sweet potatoes are cooked to your desired consistency – if you like them crispy, roasting is the way to go!
