  • 1 can Black beans Rinsed and drained
  • 1 cup Corn Fresh, frozen, or canned
  • 1 cup Bell peppers Diced, any color
  • 1 cup Cheese Shredded, any preferred type
  • 2 tbsp Smoky spice blend Use your favorite blend

Instructions

Cooking Steps

  • In a large skillet, heat some oil over medium heat.
  • Add the chicken breasts and cook until browned on both sides.
  • Add in the black beans, corn, and diced bell peppers.
  • Sprinkle the smoky spice blend over the mixture and stir to combine.
  • Cover the skillet and let it cook until the chicken is cooked through.
  • Top with cheese and cover until melted.
  • Serve warm.

Notes

For an extra touch, garnish with cilantro, avocado slices, or a dollop of sour cream. Leftovers can be refrigerated for 3-4 days or frozen for 2-3 months.
