  • 1 pound Italian sausage Use your choice of spicy or sweet Italian sausage.
  • 4 medium potatoes, diced Yukon Gold or red potatoes can also be used.
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 stalks celery, sliced
  • 2 medium carrots, sliced
  • 4 cups chicken broth Can substitute with vegetable broth for a vegetarian option.
  • 1 cup heavy cream
  • to taste Salt and pepper
  • to taste Fresh parsley for garnish Adds color and freshness when serving.

Instructions

Cooking

  • In a large pot, cook the Italian sausage over medium heat until browned.
  • Add the onions, garlic, carrots, and celery, and cook until the vegetables are tender.
  • Stir in the diced potatoes and chicken broth; bring to a boil.
  • Reduce heat and simmer until potatoes are soft, about 15 minutes.
  • Stir in the heavy cream and season with salt and pepper.
  • Garnish with fresh parsley before serving.

Notes

Sausage Potato Soup can be paired with crusty bread or a side salad. For richer flavor, add grated cheese or a dollop of sour cream when serving. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
