Shrimp and Sausage Dirty Rice

A classic Southern dish that combines shrimp and smoked sausage with aromatic vegetables and spices for a hearty one-pot meal.

  • 1 pound shrimp, peeled and deveined
  • 1 pound smoked sausage, sliced
  • 1 cup long-grain rice
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • Salt and pepper, to taste
  • 2 tablespoons vegetable oil
  • Green onions, for garnish

Instructions

Cooking

  • In a large pot, heat the vegetable oil over medium heat. Add the sausage and cook until browned.
  • Add the onion, bell pepper, celery, and garlic, and sauté until softened.
  • Stir in the Cajun seasoning and rice, letting it toast slightly.
  • Pour in the chicken broth and bring to a boil.
  • Reduce heat, cover, and simmer for 20 minutes or until rice is cooked and liquid is absorbed.
  • Stir in the shrimp and cook for an additional 5 minutes, or until shrimp are pink and cooked through.
  • Season with salt and pepper to taste.
  • Garnish with green onions before serving.

Notes

For extra flavor, marinate the shrimp in Cajun seasoning for 30 minutes before cooking. If you prefer a spicier kick, add diced jalapeños when sautéing the vegetables. Experiment with different types of sausage; andouille sausage works exceptionally well in this dish.
