Ingredients

For the Batter

  • 120 g all-purpose flour Works best for this recipe
  • 1 piece egg
  • 150 ml very cold sparkling water Ensure it is ice-cold for a light batter
  • 1 teaspoon baking powder
  • a pinch salt

For the Shrimp

  • 250 g raw shrimp, peeled and deveined (leave the tails on)
  • Oil for frying Use enough oil to submerge the fritters

Instructions

Preparation

  • In a bowl, combine the flour, baking powder, and salt.
  • Add the egg and the cold sparkling water while mixing until you achieve a smooth batter.
  • Let the batter rest for about 15 minutes.

Cooking

  • Heat oil to 180°C in a saucepan or deep fryer.
  • Dip each shrimp into the batter, then carefully place them in the hot oil.
  • Fry the shrimp until they are golden brown and crispy.
  • Drain on paper towels and serve hot with sweet and sour sauce or spicy mayonnaise.

Notes

Ensure your sparkling water is ice-cold. Do not overcrowd the pan while frying for perfect crispiness. Customize with spices or herbs for extra flavor.
