Heat a skillet over medium heat, sauté onion, garlic, and jalapeno in oil until soft. Add tomatoes and salt, cook until thickened.
Add shrimp and cilantro, cook until shrimp is pink and cooked through. Set aside.
Lay tortilla flat, spread shrimp and cheese on one half. Cook for 2 minutes, add salsa, fold and press to seal.
Flip and cook until crispy. Slice and serve. Repeat.
