Instructions

Preparation

  • Place the chicken thighs in the slow cooker.
  • In a bowl, mix together sweet chili sauce, soy sauce, garlic, and ginger. Pour this mixture over the chicken.
  • Add the sliced bell pepper and onion on top.
  • Season with salt and pepper.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. For longer storage, freeze portions of the cooked chicken for up to 2-3 months. Thaw in the refrigerator overnight and reheat before serving.
