Instructions
Prepare the Dough
In a mixing bowl, beat the cheddar cheese and softened butter until light and fluffy, about 3 minutes.
Add the kosher salt, cayenne pepper, black pepper, and garlic powder, mixing until well combined.
Gradually add the flour, 1/2 cup at a time, stirring after each addition until a dough forms.
If your cheese is dry or pre-shredded, stir in 1–2 tablespoons of ice water to help bind the dough.
Shape and Chill
Divide the dough into two portions and shape each into a 1-inch diameter log.
Wrap the logs tightly in parchment paper or plastic wrap, twisting the ends to seal.
Refrigerate for 30 minutes to firm up the dough.
Bake the Crackers
Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
Slice the chilled dough into 1/8-inch thick rounds and arrange them on the prepared baking sheets, spacing them about 1/4 inch apart.
Bake for 12–15 minutes, or until the crackers are lightly golden brown.
Cool and Store
Transfer the crackers to a wire rack and let them cool completely.
Store in an airtight container at room temperature for up to 1 week.
Notes
For serving, pair with cheeses and cured meats or include them in a charcuterie board. They also complement soups and salads.
