Ingredients

Dough Ingredients

  • 2 cups freshly shredded sharp cheddar cheese Use high-quality cheese for best flavor.
  • 8 tablespoons salted butter (softened)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon cayenne pepper Adjust for desired heat level.
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon garlic powder
  • 1/2 cup finely chopped pecans Can be substituted with walnuts or pretzels.
  • 1 1/2 cups all-purpose flour To bind dough; can be replaced with gluten-free blend.

Instructions

Prepare the Dough

  • In a mixing bowl, beat the cheddar cheese and softened butter until light and fluffy, about 3 minutes.
  • Add the kosher salt, cayenne pepper, black pepper, and garlic powder, mixing until well combined.
  • Gradually add the flour, 1/2 cup at a time, stirring after each addition until a dough forms.
  • If your cheese is dry or pre-shredded, stir in 1–2 tablespoons of ice water to help bind the dough.

Shape and Chill

  • Divide the dough into two portions and shape each into a 1-inch diameter log.
  • Wrap the logs tightly in parchment paper or plastic wrap, twisting the ends to seal.
  • Refrigerate for 30 minutes to firm up the dough.

Bake the Crackers

  • Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  • Slice the chilled dough into 1/8-inch thick rounds and arrange them on the prepared baking sheets, spacing them about 1/4 inch apart.
  • Bake for 12–15 minutes, or until the crackers are lightly golden brown.

Cool and Store

  • Transfer the crackers to a wire rack and let them cool completely.
  • Store in an airtight container at room temperature for up to 1 week.

Notes

For serving, pair with cheeses and cured meats or include them in a charcuterie board. They also complement soups and salads.
