  • 1 cup black beans, rinsed and drained
  • 1 cup corn
  • 1 whole red bell pepper, diced
  • 1 whole avocado, diced
  • 1/4 cup red onion, diced
  • 1 cup cherry tomatoes, halved

Dressing Ingredients

  • 1/2 cup Greek yogurt Can substitute with vegan yogurt.
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

Preparation

  • In a large bowl, combine the chopped chicken, black beans, corn, red bell pepper, avocado, red onion, and cherry tomatoes.
  • In a separate bowl, mix the Greek yogurt, lime juice, cumin, salt, and pepper to make the dressing.
  • Pour the dressing over the salad and toss until everything is evenly coated.
  • Garnish with chopped cilantro.
