Ingredients

Main Ingredients

  • 1 cup rice Any variety of rice can be used.
  • 2 cups vegetable broth Use low-sodium broth if preferred.
  • 1 can black beans, rinsed and drained Rinsing helps remove excess sodium.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium bell pepper, chopped

Spices

  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste Salt and pepper

Other

  • 2 tablespoons Olive oil For sautéing.
  • to taste Chopped cilantro for garnish Optional garnish.

Instructions

Preparation

  • Heat olive oil in a pot over medium heat.
  • Add onion, garlic, and bell pepper; sauté until softened.
  • Stir in rice, cumin, paprika, salt, and pepper.
  • Add vegetable broth and bring to a boil.
  • Reduce heat, cover, and simmer for about 18-20 minutes or until rice is cooked.
  • Stir in black beans and heat through.
  • Garnish with chopped cilantro before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to four days or freeze for up to three months. Use lime wedges for added flavor.
