Apple Filling
3Granny Smith apples (peeled, cored, and diced)
⅓cupgranulated sugar
½teaspooncinnamon
¼teaspoonnutmeg
1teaspooncornstarch
¼cupwater
1cupwalnuts or pecans (chopped, optional)
Caramel Frosting
½cupunsalted butter
1cuppacked brown sugar
4tablespoonsheavy cream
2cupspowdered sugar
½teaspoonsalt
1teaspoonvanilla extract
Instructions
Preheat oven to 375F. Line a jelly roll (10x15") pan with foil and spray with cooking spray.
Beat eggs, then gradually beat in sugar, applesauce, and molasses. Stir dry ingredients and add to the wet mixture. Spread into the pan and bake for 10 minutes.
Roll baked cake in a towel dusted with powdered sugar and let it cool. Make apple filling, chill, then spread on cake and roll back up.
Toast nuts, prepare caramel frosting, spread over the cake, and top with nuts. Serve at room temperature.
