Ingredients
  

Cake Roll

  • 3 large eggs
  • cup granulated sugar
  • ½ cup no sugar added applesauce
  • 2 tablespoons molasses
  • ¾ cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • ½ teaspoon cloves
  • ½ teaspoon allspice
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
  • 2 tablespoons unsalted butter

Apple Filling

  • 3 Granny Smith apples (peeled, cored, and diced)
  • cup granulated sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 teaspoon cornstarch
  • ¼ cup water
  • 1 cup walnuts or pecans (chopped, optional)

Caramel Frosting

  • ½ cup unsalted butter
  • 1 cup packed brown sugar
  • 4 tablespoons heavy cream
  • 2 cups powdered sugar
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 375F. Line a jelly roll (10x15") pan with foil and spray with cooking spray.
  • Beat eggs, then gradually beat in sugar, applesauce, and molasses. Stir dry ingredients and add to the wet mixture. Spread into the pan and bake for 10 minutes.
  • Roll baked cake in a towel dusted with powdered sugar and let it cool. Make apple filling, chill, then spread on cake and roll back up.
  • Toast nuts, prepare caramel frosting, spread over the cake, and top with nuts. Serve at room temperature.

Notes

For a richer flavor, you can drizzle extra caramel sauce over each slice before serving.
