  • 2 cups diced carrots
  • 1 cup lentils Rinsed and sorted if dried
  • 1 unit onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 4 cups vegetable broth Ensure it's vegan-friendly for a vegan soup
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • to taste Fresh herbs for garnish (optional) Such as parsley or cilantro

Instructions

Preparation

  • Heat olive oil in a large pot over medium heat. Add the chopped onions and minced garlic, sautéing until the onions are translucent.
  • Add the diced carrots, cumin, coriander, salt, and pepper. Cook for about 5 minutes, allowing the spices to release their aromatic flavors.
  • Stir in the lentils and vegetable broth, then bring the mixture to a boil.
  • Once boiling, reduce the heat to simmer and cook for about 30-40 minutes, or until the lentils are tender.
  • Optionally, use an immersion blender to puree the soup for a smoother consistency, or leave it chunky for a heartier texture.
  • Serve warm and garnish with fresh herbs, if desired.

Notes

For a richer flavor, consider roasting the carrots beforehand. Feel free to adjust spices to your liking. Add coconut milk or cream for a creamier soup. Diced potatoes or greens like spinach can be added for extra nutrition.
