Heat olive oil in a large pot over medium heat. Add the chopped onions and minced garlic, sautéing until the onions are translucent.
Add the diced carrots, cumin, coriander, salt, and pepper. Cook for about 5 minutes, allowing the spices to release their aromatic flavors.
Stir in the lentils and vegetable broth, then bring the mixture to a boil.
Once boiling, reduce the heat to simmer and cook for about 30-40 minutes, or until the lentils are tender.
