Ingredients

For the Chicken

  • 1 lb boneless, skinless chicken breasts or thighs, cut into small pieces
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper adjust to taste
  • Salt and black pepper to taste

For the Jalapeño Lime Sauce

  • 1/2 cup sour cream or Greek yogurt
  • 1-2 jalapeños, seeds removed (for less heat)
  • 1 tbsp chopped fresh cilantro
  • 1 clove garlic, minced
  • Juice of 1 lime

For Serving

  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup thinly sliced red onion
  • 1/2 cup crumbled queso fresco or shredded cheese
  • Fresh cilantro for garnish

Instructions

Marinate the Chicken

  • In a bowl, combine the chicken pieces with olive oil, chili powder, smoked paprika, cumin, garlic powder, onion powder, cayenne pepper, salt, and pepper. Toss well to coat the chicken evenly. Let it marinate for 10-15 minutes for the flavors to meld.

Prepare the Jalapeño Lime Sauce

  • In a blender or food processor, combine the sour cream or Greek yogurt, jalapeños, lime juice, cilantro, garlic, and a pinch of salt and pepper. Blend until smooth and creamy. Adjust the seasoning to taste and set aside.

Cook the Chicken

  • Heat a large pan or skillet over medium-high heat. Add the marinated chicken and cook for 6-8 minutes, stirring occasionally, until the chicken is cooked through and slightly crispy on the edges.

Warm the Tortillas

  • While the chicken cooks, warm the tortillas in a dry skillet over medium heat for about 30 seconds per side, or until soft and slightly charred. Keep them warm by wrapping them in a clean kitchen towel.

Assemble the Tacos

  • Place a warm tortilla on a plate. Add a scoop of the cooked chicken to the center. Top with shredded lettuce, diced tomatoes, red onion, and a sprinkle of queso fresco or shredded cheese.
  • Drizzle the jalapeño lime sauce generously over the taco filling. Garnish with fresh cilantro for an extra burst of flavor.

Serve

  • Serve the tacos with lime wedges on the side for an extra zing, and enjoy the spicy, tangy goodness!

Notes

Marination Matters: Letting the chicken marinate longer (even overnight) will enhance the flavors significantly. Adjust the Heat: Not a fan of too much spice? Feel free to reduce the cayenne and skip the jalapeños in the sauce. Taco Assembly: Warm the tortillas just before serving to prevent them from drying out.
