Ingredients

For the filling

  • 1 cup fresh spinach, chopped Use fresh spinach for the best flavor and texture.
  • 1 cup feta cheese, crumbled Can be replaced with goat cheese or ricotta.
  • 1/4 cup cream cheese, softened
  • 1 ea egg, beaten (for egg wash) For brushing the pastry.
  • to taste Salt and pepper
  • optional herbs like dill or parsley For added flavor.

For the pastry

  • 1 sheet puff pastry Keep cold before baking for crispier results.

Instructions

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a bowl, mix the chopped spinach, feta cheese, cream cheese, salt, and pepper until well combined.
  • Roll out the puff pastry sheet on a lightly floured surface. Cut into strips, about 1 inch wide.
  • Place a spoonful of the spinach and feta mixture at one end of each strip.
  • Fold the pastry over the filling and twist it to create a spiral shape.
  • Place the twists on a baking sheet lined with parchment paper. Brush with beaten egg for a golden finish.

Baking

  • Bake in the preheated oven for 15-20 minutes or until golden and crisp.

Serving

  • Serve warm with your favorite dip, such as tzatziki or a tangy yogurt dip.

Notes

If you have leftovers, allow them to cool completely before storing. Place the twists in an airtight container and refrigerate for up to 3 days. For longer storage, freeze them before baking. They can also be made ahead of time and kept refrigerated before baking.
