  • 2 slices slices of bread A sturdy bread such as sourdough, whole grain, or rye is recommended.
  • 1 cup fresh spinach Can use frozen spinach, but thaw and squeeze out excess moisture.
  • 1/2 cup feta cheese, crumbled Substitute with mozzarella or goat cheese for variation.
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 tablespoons butter Use plant-based option for a vegan version.
  • Salt and pepper to taste

Instructions

Preparation

  • In a skillet over medium heat, melt 1 tablespoon of butter.
  • Add the fresh spinach and sauté until wilted.
  • Stir in the sun-dried tomatoes and season with salt and pepper.
  • In another skillet, butter one side of each slice of bread.
  • On the unbuttered side, layer the spinach mixture and feta cheese.
  • Top with the second slice of bread, buttered side up.

Cooking

  • Grill over medium heat until golden brown on both sides and the cheese is melted.
  • Serve warm.
