  • 0.5 cup Nuts (such as walnuts or almonds), chopped Toasting the nuts is recommended for added flavor.
  • 0.5 cup Feta cheese, crumbled Can be omitted or replaced with a vegan alternative for a vegan version.

For the Dressing

  • 3 tablespoons Balsamic vinegar
  • 1 tablespoon Honey Can be replaced with maple syrup for a vegan version.
  • 2 tablespoons Olive oil
  • 1 pinch Salt
  • 1 pinch Pepper

Instructions

Preparation

  • In a large bowl, combine the spring mix greens, halved cherry tomatoes, chopped nuts, and crumbled feta cheese.
  • In a small bowl, whisk together balsamic vinegar, honey, olive oil, salt, and pepper to make the dressing.
  • Drizzle the dressing over the salad and toss to coat evenly.
  • Serve immediately as a side dish or a light lunch.

Notes

This salad is best enjoyed fresh. Store leftover components separately to maintain quality. The dressing can be made in advance and will keep well for about a week.
