Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash and pierce the sweet potato with a fork, then bake for about 45-60 minutes until tender.
  • While the potato is baking, cook the bacon in a skillet until crispy. Once cooled, crumble the bacon.
  • In the same skillet, cook the eggs to your liking, whether scrambled or fried.
  • Once the sweet potato is cooked, slice it open and fluff the inside with a fork.
  • Add the cooked eggs, crumbled bacon, and cheese into the sweet potato.
  • Season with salt and pepper, and garnish with green onions if desired.
  • Serve hot and enjoy a nutritious breakfast!
