Ingredients

Dry Ingredients

  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt

Wet Ingredients

  • 3 large eggs
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 0.5 cups vegetable oil
  • 1 tablespoon lemon juice
  • 1 each zest of lemon Use fresh lemon zest for best flavor

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a bowl, mix the flour, baking powder, baking soda, and salt.
  • In another bowl, beat the eggs and sugar until light and fluffy.
  • Add in the sour cream, vegetable oil, lemon zest, and lemon juice. Mix until combined.
  • Gradually add the dry ingredients to the wet ingredients and mix until just combined.

Baking

  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  • Let the loaf cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

Notes

This lemon loaf is delightful on its own, but can be enhanced with a simple glaze or served with whipped cream. Store it in an airtight container at room temperature for up to a couple of days or refrigerate for about a week.
