Ingredients
For the Cookies
- 1 box strawberry cake mix
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
For the Strawberry Lemon Glaze
- 1 cup powdered sugar
- 1 tablespoon strawberry jam
- 2 tablespoons lemon juice
- Zest of 1 lemon
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the strawberry cake mix, vegetable oil, eggs, and vanilla extract until a dough forms.
- Shape the dough into balls and place them on the baking sheet. Bake for 10-12 minutes until the edges are set.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack. Prepare the glaze while the cookies cool.
